American Pig Liver Sausage


2 1/2 lbs. fine ground cooked pork butt (boiled)
2 1/2 lbs. fine ground cooked pork liver (boiled)
2 Tbsp. salt
5 Tbsp. spiced salt
1 cup finely chopped onions
1 cup water used to boil meat


Boil pork butt and liver in water to which spiced salt has been added. (Water should cover meat.) Combineall ingredients, mix until smooth and pasty, and stuff into hog casing. Simmer in salted water for 20 minutes. Refrigerate for 24 hours.To cook, broil or fry in butter.


3 lbs. medium ground pork butts
1 cup water
2 lbs. mashed cooked pig's liver
2 Tbsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 cup sauteed onion
1 Tbsp. black pepper

Combine all ingredients, mix well and stuff into hog casing.
Tie at 4-5 inch intervals. To cook, fry, broil or grill.
